Nutella & Sea Salt Cookies


Last Friday saw Luke & I proceed with round two of our Great British Bake Off tournament, and this time we thought that we should each bake what the other baked last week, meaning I was to bake cookies and Luke was to bake some brownies. I scoured the internet for days looking for the perfect recipe (and one that ensured me a win) and ended up settling on these Nutella & Sea Salt cookies. I'm a huge fan of the salty-and-sweet combo, hence why I chose to make peanut butter brownies last week and why I particularly enjoy dipping McDonalds chips into chocolate milkshake. Ahem. But that's a weird quirk for another day. The recipe that I followed is super easy as it only has 5 ingredients, although my cookies don't look much like they do in the recipe's photo!


Ingredients ::
1 cup (approx. 300g) of Nutella.
2 tablespoons of brown sugar.
1 egg.
1/2 cup & 1 tablespoon (approx. 70g) of self-raising flour.
Coarse sea salt for sprinkling.

:: METHOD ::
Step one. Line your baking tray with baking parchment and preheat your oven to approx 190c.

Step two. Put your Nutella into a bowl with the flour. Mix together until it becomes sort of breadcrumb-y. Add your add and whisk in, then add the sugar. At this point your mixture should become very thick and clump together.

Step three. Transfer your mix into a smaller bowl and stick it in the freezer for around 10 minutes.

Step four. Take your mix out of the freezer and, using a tablespoon, measure it out evenly onto the baking tray. Make sure you leave plenty of space between each cookie, as they spread a lot during baking. I got 10 cookies from this mix, so maybe consider using two trays if you need to. Pop them into the oven.

Step five. Leave your cookies to bake for around 8 - 10 minutes. When they're ready, take them out of the oven and transfer them onto a wire rack to cool. Using a salt grinder, grind some sea salt on top of your cookies and gently use your finger to press the salt in a little bit.

And you're done! These cookies taste delicious right out of the oven, although they taste pretty damn good once they've cooled down too! I baked these last Friday and by Saturday morning they were all gone, so they were definitely a hit with my family. The chocolate nutty-ness of the Nutella is really indulgent and fudgy, then the little hit of sea salt on the top it takes it to a whole new level. They're honestly so so good. As it turned out, these cookies got me a win for this week's Bake Off so the score between me & Luke is currently 1-1!
