Chocolate Easter Biscuits (Vegan)

I'll start off this recipe post by apologising for having two baking posts in a row! I'd had the flapjacks post scheduled for weeks and today I ended up making some chocolate biscuits for Easter that were nice enough to earn a recipe post of their own. And since Easter is literally two days away I figured I'd just pop this up today rather than leave it too late. Scheduling issues aside - can we have a little lol at my poor icing skills? I did everything by the book (or blog - as I used the icing I shared in my gingerbread Blogmas post last December) and I still somehow messed it up. I'm just not very artistic hahah.

I've been in the kitchen again...
Seriously tho, are you guys liking these vegan recipe posts?! I'm so into baking at the moment - it's doing wonders for my mental health - and it's been quite nice to be in on the foodie conversations for a change. Since my health issues started it's been a little more than difficult for me on the food front but I feel like I'm slowly healing myself, one bake at a time - even if I can't always stomach them.

{ Weekend diary; part two }
These days, I adhere to a very strict schedule when I'm out. Of course it's massively anxiety-driven and I probably shouldn't give in to it so often but sometimes writing down a minute-by-minute plan helps me step out of the front door. I've been using this coping technique more often than not over the past year, but on Saturday something happened: I went with the flow.

At the beginning of the year I had an idea: to go through
every celebration this year and veganise my traditional recipes in order to
create my own recipe bible. Now that I’m doing better with food I’ve rekindled my
love of baking and I can picture myself, aged 60, teaching my grandchildren how
to bake vegan cupcakes and biscuits and muffins. As for the present, I dream of
being the person that bakes everyone’s birthday cakes & for people to just know something is going to be good
because I’m the one that made it. Gifting my bakes has given me a real sense of
purpose and accomplishment and has proven to be a calming and welcome
distraction from my crazy anxiety brain.

Since my visit to VX Bristol a few weeks ago I have been craving banana bread like there's no tomorrow. The only issue was that bananas disappear so quickly in my house. We could buy two bunches of six on Monday and they'll be gone by Thursday, so we never had any hanging around that needed to be used up. Thankfully my Dad doesn't like bananas once the skin gets brown spots (whatta weirdo, that's when they're the nicest!) so he passed them over to me and I stashed them in my cupboard away from my fam. To bake the banana bread I followed this recipe from BBC Good Food but I did stray from it a few times.

When my Dad told me a few months ago that a vegan cafe was opening in Bedminster, I was excited although a little dubious. Bristol has its fair share of vegan eateries, but they're usually in Clifton or in town and East Street seemed an odd place to put one. My first impression has since been dashed, though, because it's always busy whenever I walk past! It's been on my to-do list forever but I never had occasion to go, what with my anxiety and it being too far from home but too close to my Dad's, until my Mum, sister and I went on a little charity shopping expedition last week.

Last Friday saw Luke & I proceed with round two of our Great British Bake Off tournament, and this time we thought that we should each bake what the other baked last week, meaning I was to bake cookies and Luke was to bake some brownies. I scoured the internet for days looking for the perfect recipe (and one that ensured me a win) and ended up settling on these Nutella & Sea Salt cookies. I'm a huge fan of the salty-and-sweet combo, hence why I chose to make peanut butter brownies last week and why I particularly enjoy dipping McDonalds chips into chocolate milkshake. Ahem. But that's a weird quirk for another day. The recipe that I followed is super easy as it only has 5 ingredients, although my cookies don't look much like they do in the recipe's photo!

I kicked off 2016 in the best way possible - by competing in a Great British Bake Off against my boyfriend and ending up with a kitchen full of delicious baked goodies. No room for salad leaves in my New Year's fridge I'm afraid! Luke decided to bake some simple (yet incredible) white-and-milk-chocolate cookies, where-as I thought I'd be a bit more adventurous and tried my hand at baking some peanut butter brownies. As it turned out, Luke won our bake-off, namely because I'm the only person in my family that actually likes peanut butter. Of course I forgot about that when choosing my bake and now have an entire batch of brownies to myself... not that I'm complaining. BUT it would appear that everyone on Twitter/Instagram liked the look of these, so I thought I'd pop up a post sharing the recipe (although I did stray from it a few times by accident.)

If you follow me on Twitter or Instagram, I'm sure you know that it was my birthday last week. I turned 20, and I wanted a kind of no-fuss, no frills day. So I went to the Bristol Museum with my boyfriend and younger sister (she had an in-service day at school), and then hopped across the road to The Berkley to meet my Dad for lunch. To be honest, unless my Dad had mentioned it, I would never have thought to stop into The Berkley to eat, but I was so glad we did.

To fully complete my induction into being a vegetarian, I thought it was about time I introduced myself to a vegetarian burger. And what better place to try out & talk about than Nandos? I have always been a huge lover of Nandos (especially their chips & sweetcorn), but I'd never re-visited since becoming a vegetarian, despite their (albeit small) veggie offerings. I can guess that people wouldn't be all that tempted to go to a chicken restaurant if they're a veggie, but my Dad had never been and wanted to try it out, and I liked the sound of one of their veggie burgers, so yesterday lunchtime we took a trip to the Park Street branch.
