Banana & Oat Breakfast Muffins (Vegan)

Seriously tho, are you guys liking these vegan recipe posts?! I'm so into baking at the moment - it's doing wonders for my mental health - and it's been quite nice to be in on the foodie conversations for a change. Since my health issues started it's been a little more than difficult for me on the food front but I feel like I'm slowly healing myself, one bake at a time - even if I can't always stomach them.


The recipe for these muffins is one I created completely on my own - my very first signature bake! I concocted them a few weeks back whilst my internet was down (and still is) and I didn't have access to the multitude of recipes floating around online. I took inspiration from my banana bread recipe but swapped out a few ingredients and reduced the measurements because the bananas I had to use up were smaller than those I'd use to make banana bread. I kind of winged it, to be honest, and although they kind of stuck to the cupcakes cases they turned out so well I thought I'd share them.
Ingredients (makes 9 small muffins) ::
80g self-raising flour.
30g oats.
50g brown sugar.
1 tsp baking powder.
1 tsp cinnamon.
 40g unsweetened soy yoghurt.
 3 small over-ripe bananas.

Method ::
1. Preheat your oven to 180oc. Prepare a cupcake tin with 9 cupcake cases.

2. In a bowl, mash your peeled bananas with a fork. Like with my banana bread, you can leave the banana a little lumpy because I quite like having bigger blobs of it within the mixture but it's up to you what consistency you'd prefer.

3. Add in your sugar and yoghurt and mix thoroughly until completely combined.

4. Sieve in your dry ingredients and then pop in the oats, too. Mix until fully combined. It's going to turn into a sort of thick paste - not as runny as cake mix - and it also looks a little lumpy because of the oats. Make sure that the lumps are oats, though, and not pockets of flour!

5. Bake for approx 20 minutes, or until a skewer comes out clean when poked in the centre.
Aaaand you're done! I love the texture the whole oats give these muffins and they make perfect accompaniments to a glass of cold orange juice and some strawbs on a Sunday morning. They're sweet, soft and positively addictive. I dare you not to eat three in a row like I did.

  6. I'm a vegetarian, and those Vegan Banana and Oat Breakfast Muffins look delicious! I'm terrible at baking but it looks like a recipe I could manage. If I do overcome my laziness and make them I very much doubt I'll be able to stop after only eating three!
